Snail liver / world premiere /
To be served on lightly buttered white bread /canapés/. Needs more salt!!
Drinks: dry sect, dry white wine.
Store in the fridge at 2 – 8° C.
Snail caviar
To be served on lightly buttered white bread /canapés/.
Garnish: lemon, olives, capers
Drinks: dry sect, Martini Extra Dry.
Store in the fridge at 2 – 8° C.
Snail soup
Bring to boil. Serve hot and drink immediately from preheated cups. It is recommended to add cognac of your own choice to increase the taste and aroma.
Garnish: Parisian cheese sticks / salty seed sticks made of puff paste /.
Store in at 15 – 19° C.
Snails ala Bourguignonne
Remove the foil and bake in a preheated oven /not in a microwave!/ at 220° C for 10 minutes. To be served hot on white bread /baguette cut to slices, the so-called canapés/.
When it starts baking, pour the hot butter from the shell on slices of bread and add the snail meat using snail tongs, your hand and snail fork or a toothpick. To be consumed immediately. Drinks: dry sect, dry white wine, Martini Extra Dry.
Store in the fridge at – 18° C.
Snail paté
To be served on white bread / canapés /.
Drinks: dry sect, dry white wine, Martini Extra Dry.
Store in the fridge at 2 – 8° C.
